Through adopting common nutriment testig method, analysed Pelteobagrus fulvidraco's common nuritrient substance, amount of amino acid and fatty acid.
the result showed Pelteobagrus fulvidraco's roe sample contains 33.56% of crude protein, 5.53% of crude fat content, 3.23% of crude ash, and 54.67% of water content.
16 kinds of amino acid was found in roe sample, and the total amount of amino acid occupied 70.69%, total amount of essential amino acid occupied 31.38%. In amino acid, total amounts of Glu, Leu,Lys,Asp and Ala was 48.49% which was higher than others. 22 kinds of fatty acid was detected, including 26.71% of saturated fatty acid,48.86% of monounsaturated fatty acid, and 23.76% of polyunsaturated fatty acid .
