Ingredients: duck meat, beer, spring onions, ginger, pepper, star anise, cinnamon, garlic (seasonings are optional).

Approach:
1. Heat the pan or wok on stove, grease it with oil, and place sugar (optional) and seasonings - the onions, ginger (cut fine), pepper, star anise, cinnamon, garlic in it and stir-fry for one minute, before adding duck meat in and stir-fry for a few minutes.
2. Add a spoonful of soy sauce and some beer ( the amount is dependent on the amount of duck meat and your preferred flavour), continue stir-frying before covering the pan or wok with its lid, and simmering on a small fire, until the sauce is about to be fully absorbed.
3. Turn off the stove and wait for 15-20 minutes before serving.
(Sprinkle some white sesame seeds on top to decorate if you like.)
